The Wedding Story
The Fairmont Grand Del Mar is one of San Diego's most prestigious five-star wedding venues, nestled in the hills of Carmel Valley with Mediterranean-inspired architecture and manicured gardens. This venue demands floral design that matches its grandeur — and CHIC Flowers delivered with an opulent, garden-romantic aesthetic.
For this wedding, our team designed a sweeping ceremony arch dripping with garden roses, ranunculus, and trailing jasmine that framed the couple against the resort's iconic fountain courtyard. The reception featured tall, dramatic centerpieces on gold candelabras alternating with low, lush garden-style arrangements overflowing with peonies, hydrangeas, and eucalyptus.
Every detail was coordinated with the venue's elegant ballroom, from the blush and ivory palette to the delicate garland runner along the head table. The result was a seamless blend of five-star luxury and organic romance that perfectly embodied the couple's vision.
Why this venue is unique
Few San Diego venues rival the Fairmont Grand Del Mar's sheer architectural scale — its 4,100 sq ft Grand Ballroom, the Aria Lawn framed by Mediterranean loggias, and the iconic fountain courtyard each demand a completely different floral vocabulary. A wedding here is effectively three venues in one, and each space carries its own ceiling height, light quality, and sightline considerations that shape every arrangement we design.
Floral challenges we solved
The ballroom's 22-foot coffered ceilings swallow anything under four feet of vertical lift, so we engineered tall gold candelabras tall enough to read from across the 350-seat room without blocking crosstable conversation. The outdoor fountain courtyard sits in full afternoon sun until 5pm, which required heat-tolerant bloom selection (hydrangeas hydrated overnight in refrigerated storage, imported garden roses processed on-site) and a fast-paced install window between the ceremony and cocktail hour.
Our design approach
We anchored the design on a single recurring motif — trailing jasmine vine — carried from the ceremony arch through the ballroom head table garland to the cake. This created visual continuity across the three venue spaces without repeating identical arrangements. The blush-and-ivory palette was layered with three distinct garden rose varieties (David Austin Juliet, Patience, and Keira) so the palette read unified at a distance but held depth when guests approached each table.
